| Our Southern Bluefin Tuna (SBT) are harvested in the winter months when they are at their optimum quality. During harvest our SBT are bled, gilled and gutted. Our senior staff are involved in the whole process to make sure that our SBT are handled hygienically and quickly. Our harvest process is designed to minimize the time from when the fish are caught out of the water until placed into the iced slurry bins. |
